Mishri, also known as rock sugar or
crystallized sugar, is unrefined sugar commonly used in
Indian and Middle Eastern cuisine. It is made by boiling and crystallizing
sugarcane juice or other sweet sap.
It is commonly used as a sweetener in tea, coffee, other hot beverages, and desserts and sweets.
Aside from its culinary uses, mishri is also believed to have some medicinal properties in traditional Ayurvedic medicine. It is said to help with
digestion, boost immunity and have a cooling effect on the body.
Mishri is available in both small and large crystals, depending on the intended use. It is also available in powdered form for convenience. It should be stored in an airtight container in a cool, dry place to prevent clumping or melting.
